    Inexpensive, easy and quick to bake, these delicious sugar cookies are neither too sweet nor too crumbly. They’re just perfect served (or dunked in) a cup of tea or coffee. We love that this recipe only calls for seven ingredients, including staples like flour, sugar, baking powder, and vanilla extract. Just add eggs and butter, mix everything together and enjoy straight out of the oven.


    • 350g plain flour

    • 1 tsp baking soda

    • 1/2 tsp baking powder

    • 225g softened butter

    • 300g caster sugar

    • 1 medium egg

    • 1 tsp vanilla extract


    • Preheat oven to 190°C/370°F/Mark 5. Line 2 baking sheets with parchment paper.

    • Place the butter and caster sugar in a mixing bowl and beat with a wooden spoon until light and creamy. Beat the egg and vanilla, then stir in the flour, baking soda and baking powder to form a soft but not sticky dough.

    • With damp hands, roll the dough into balls the size of a whole walnut. Place on baking sheets, leaving enough space between them to spread.

    • Bake for about 9-10 minutes or until golden and lightly cracked. Let cool on baking sheets for 5 minutes before removing to wire rack to cool completely.

    • Sprinkle with icing sugar before serving.

    Top tips for making sugar cookies

    If you wish, you can add grated orange or lemon zest to this paste. Or why not drizzle those cookies with melted chocolate too. If the mixture is a little soft, put it in the fridge first before rolling it.
