    These cherry muffins are so easy to make at home in just five easy steps. Each sponge cake is infused with almond essence, which goes perfectly with sweet cherries. Once these muffins have cooled, we recommend serving with a dollop of whipped cream.


    • 175 g cooking liquid or melted margarine

    • 175 g of golden powdered sugar

    • 300 g of self-rising flour, sifted

    • 3 medium eggs

    • 5 tablespoons of milk

    • 1 tsp of almond essence

    • ½ teaspoon of baking powder

    • 250 g fresh cherries, pitted and cut into wedges

    • Icing sugar (optional)


    • Preheat oven to 180 ° C / 350 ° F / thermostat 4. Place 12 muffin cups in a muffin pan.

    • Add all the ingredients except the cherries to a bowl and beat with a wooden spoon until the mixture is smooth.

    • Reserve a few cherries for decoration and add the rest to the mixture.

    • Divide the mixture evenly between the paper cups and decorate the top with the remaining cherries.

    • Bake for 20-25 minutes, then let cool. Sprinkle with icing sugar to serve.

    If you can’t get fresh cherries, you can try candied cherries instead. You can also swap the cherries or replace them with raspberries or blackberries.
