Hairy Bikers Cardamom Biscuits are the perfect afternoon snack that’s both delicious and unique in flavor and texture.
Si King and Dave Myers, aka The Hairy Bikers, are famous for their desserts. The two have traveled the world to find the best blend of sweet and savory flavors to bring to their recipes and these cookies are no exception. These Mediterranean inspired cookies feature a flavor that is a delicious blend of eucalyptus, pepper and mint with the infusion of cardamom, along with a strong citrus kick from the lemon. Although we used floral cookie stamps in our design, you can use any symbol you like – or leave them plain.
225g softened butter
150g caster sugar
finely grated zest of 1 lemon
250g plain flour
100g ground almonds
3 teaspoons ground cardamom or 1 teaspoon cardamom seeds, ground in a pestle and mortar
Preheat oven to 190°C/375°F/Mark 5. Line 2 large baking sheets with parchment paper.
Using an electric mixer, beat butter, sugar and lemon zest in a large bowl until pale and fluffy. Stir in the flour, almonds and cardamom until the mixture is well blended and comes together to form a stiff dough.
Roll the dough into 24 balls and place 12 on each baking sheet – make sure to leave space between each one. Press each cookie with a cookie stamp or the bottom of a glass to flatten and leave decorative indentations in the dough.
Bake one sheet at a time for 12 to 14 minutes, until cookies are lightly browned. Let them cool on the baking sheet for a few minutes, then transfer them to a wire rack. They will crisp up as they cool. Store cookies in an airtight container and enjoy within 7 days.

Nutmeg and cinnamon are two other spices that also pair beautifully with cardamom, so don’t be afraid to liven things up with this recipe if you’re a spice fan.
